Fresh side is uncured pork belly, or what I often refer to as ‘bacon before it becomes bacon’. It is a great option for those that wish to be in control of the ingredients when preparing bacon. It can be seasoned simply with a dry rub of salt, pepper, and sugar (whether white, brown, coconut, maple syrup, etc.). Here is how I typically prepare fresh side.
