Consistently SOLD OUT at the Farmers Market! The Coulotte is a lean steak cut from the Sirloin Cap aka Brazilian Picanha. Prepare using dry heat. Best seasoned with salt and pepper, then dry roasted or grilled similar to the Tri-Tip.  Cut across the grain for maximum tenderness after 5-10 minutes of rest.
